Earthen clays (pottery clay, ceramic clay, etc) LSU Tigers football team shirt are all water-based. True modeling clays are oil-based though so contain no water (and therefore can never dry), and importantly they also have wax added so they can never even be hardened. And then more recently, various other types of clay came along. The main ones were other types of air-dry clay (many-many of those), polymer clay, and epoxy-type clay. ...Most air-dry clays you'll see besides earthen air-dry clays just harden by evaporating out their water, but are never kiln fired because they'd just burn up. Some people speed up that drying by putting in a low-heat oven but that can sometimes cause cracking from too-rapid drying.
